Hi, I'm Chef Mariko Amekodommo, Host of Culinary Adventures With Mariko. Today, I'm going to show you how to make a broccoli, cauliflower and pineapple stir fry. I absolutely love this stir fry because it's really light and healthy, but the pineapple gives it a really sweet kick. To get started, you'll want to start with a well-seasoned wok. Add a couple tablespoons of oil and I'm using a canola oil in my wok because it heats at a higher temperature and prevents things from sticking. And I'm just going to put it over medium high heat. While that's getting started, I want to chop up my broccoli, cauliflower and pineapple. The key to wok cooking is making sure that everything is small and has a lot of surface area. That means it's going to cook up a lot faster. So, you want to have the broccoli in little pieces, like some of these ones, that's too big. So, you just want to cut them up a little bit, make everything a little bit more even. This is a great stir fry on its own, or if you want to, you could add some chicken or some shrimp. It's absolutely delicious. Alright. I've got about a cup of broccoli in small bite size pieces; then, I'm going to do the same thing on the cauliflower. I'm actually cutting using quarters because the cauliflower was a little big to start with. Alright, one more piece, and that looks like about a cup of cauliflower. Today, I'm using fresh pineapple that's already cut to small bite size pieces. I'm just going to add about a cup of pineapple to my bowl and now, it's ready to be stir fried. You'll want to keep moving it around for about three to five minutes. I'm going to get my stir fry another good stir to make sure nothing sticking and I'm going to turn it down for just a second while I make a marinade for the stir fry. You could use your favorite teriyaki sauce that's already in a jar; but I'm going to make my own. First, you want to add a little bit of sesame oil, this is about a teaspoon. Then, you want to add about a teaspoon of soy sauce or tamari. And then, I have some chili sauce and then some garlic. That's about a, that's about three cloves of garlic chopped. Alright, my stir fry is done and it smells delicious. And again, this is just broccoli, cauliflower and pineapple and feel free to add your favorite meats and sauces to it.
