Hi, I'm Randy Rabney of The Conscious Plate. I am a chef, a coach and a expert on teaching people how easy it can be to eat real food on a regular basis. And this is how to make a taco salad. So today we're going to get started on our taco salad and on the stove I have a cast iron pan that I'm heating to that I'm going to be adding some grass feed ground beef. I like to use grass feed ground beef because I like to use food that's as close to the way nature created it as possible and grass is the natural diet of the animal. Now I'm seasoning this beef with some cumin powder a taco salad has all the great ingredients that you use to fill a taco only it's in salad form. Next I'm adding some garlic powder also known as granulated garlic and then I'm adding some chili powder. Chili powder is actually a blend of different seasonings. A nice pinch of some unrefined sea salt. So I'm going to start to break up the meat, I can see that it's already browning at the bottom so I just want to let our meat cook through, a little bit more cumin, a little bit more chili powder and there we have our seasoned beef. So we've taken the meet off the stove and now we're ready to compose our salad with the remaining ingredients. In this bowl I have a mix of shredded Romaine lettuce and shredded red cabbage that's going to give us good crunch and that's going to be the base of our taco salad and I'm just going to lightly dress that and the way that I'm dressing that is with some really good extra virgin olive oil, a nice organic extra virgin olive oil just a little bit of it and a nice squeeze of fresh lime juice and a little pinch of sea salt, a little pinch, give that a nice toss and if I were making tacos, hard or soft shell I would serve one or both of these along side as a topping for the taco. Then next I'm going to add the meet that I just cooked, it's beautiful grass feed ground beef, nicely seasoned, putting that right into my salad and then my next ingredient is going to be a fresh salsa. The salsa is made of tomato, onion a little bit of garlic, some fresh cilantro, some lime juice, a little sea salt and some creamy avocado so this is going to add some more moisture and creamy texture to our salad. I'm going to grate some nice cheddar cheese and I like to use raw cheese. A lot of people have a hard time digesting dairy products and that's because the pasteurization product, process, sorry, kills an enzyme that's needed to digest dairy so if you have a hard time with dairy you might be okay with some raw cheese. And lastly I'm adding some organic sour cream and now I'm just going to give it a toss incorporating all of these beautiful flavors that you would get when you bight into a taco the only thing missing is the tortilla. And if you wanted to you could definitely crumble up a few tortilla chips in here. And now it's time to plate the food and try it, oh that's beautiful, I can not wait to take a bite of all of these big delicious fresh flavors, my mouth is literally watering, that tastes so good.
