I'm Anna Maria Knapp, owner of Celebrations Wine Club. We're located here at beautiful Bourassa Vineyards and Winery in Napa Valley. Our topic is how to make Stella Rossa Wine. Stella Rossa is a brand from north eastern Italy. And it's just a delightful light, fruity, semi-sweet wine. Sometimes still, sometimes sparkling. Vic Bourassa, owner of Bourassa Vineyards is going to show us how to make a semi-sweet wine. Basically what you do is you de-stem the grapes. You take the skins off of the juice. You take that juice and you put it into a tank or a vat. You inoculate it with a particular yeast and then you measure the sugar. Now what we do is we measure with a hydrometer. So this is a vat of a little bit of the wine from the vat. It is a white wine that's gone to fermentation. But basically we let the hydrometer float inside the wine. And where it stops is where your sugar is. I can see that this one registers at five percent. So at five percent sugar what we would do is chill this wine down to 32 degrees. It kills the yeast, stops them from fermenting. Or you can actually hit this with sulfur. An extra amount of sulfur and also will stop the yeast from fermenting. And what you are left with is a beautiful clear, white or rose wine that is semi-sweet. Sometimes a light fruity semi-sweet wine hits the spot.
