Hi, I'm Chef Mariko. Today, we will be making stuffed shells with feta, mozzarella and ricotta. To get started, you want to make the filling for your shells. Add one 15-ounce package of ricotta to a large bowl. Then add a half a cup of crumbled feta cheese, half a cup of mozzarella shredded and then, three eggs. Then, you want to add a quarter cup of fresh herbs chopped. Today, I'm using a combination of chives, some Italian parsley and some fresh basil. You then want to add your fresh herbs to the ricotta cheese and egg mixture. Stir until blended and smooth. Now that we have our ricotta filling made, we want to get it ready for stuffing the pasta. The easiest way is to put it into a pastry piping bag. You can buy these at the store or you can make one yourself at home just using a round of wax paper. By putting the filling in the pastry bag, it makes it really really simple for filling your pasta. Now your ricotta mixture is ready for filling the pasta. Now, you want to stuff your shells. First, start by putting a little bit of your pasta sauce in the bottom of a 13 X 9 oven safe dish. Take your shells and lay them at the bottom of the baking dish. Now, I'm going to take my piping bag that is filled with the ricotta mixture. I can just put it inside the center of each shell and gently push, making it really easy to fill. If you aren't able to use a pastry bag, feel free just to use a tablespoon instead. Now, I'm just going to drizzle a little bit more of my sauce over the top of the shells. Just garnish with your favorite Parmesan or mozzarella cheese. Today, I'm using Parmesan. And it's ready to go. Bake this at 400 degrees for 20-25 minutes.
