Hi, I'm Chef Mariko. Today, I will be showing you how to make stuffed acorn squash with ricotta. To get started, you'll want to get one acorn squash, then just cut in half. Then, you'll want to use a spoon to get the seeds out of the center. Then, I'm going to put it on a baking dish with a little drizzle of olive oil. Then, I'm going to sprinkle some of my favorite spice mixture over the acorn squash. What I'm using today, is a little salt-free lemon pepper seasoning. Now, I'm just going to bake the acorn squash in the oven at 350 degrees for about 30 minutes, or until it is soft. You want to make the filling for your shells, add one, 15 ounce package of ricotta to a large bowl. Then, add a half a cup of crumbled feta cheese, half a cup of mozzarella, shredded and then, three eggs. Then, you want to add a quarter cup of fresh herbs, chopped. Today, I'm using a combination of chives, some Italian parsley, and some fresh basil. You then want to add your fresh herbs to the ricotta cheese and egg mixture, stir until blended and smooth. Once you pull the acorn squash out of the oven, you can then stuff it with the creamy ricotta mixture. This is how the squash is going to look. Now, I'm just going to put a couple tablespoons of the ricotta mixture into each acorn squash. Now, just sprinkle with a little grated mozzarella or Parmesan cheese. And that's it, put it back in the oven at 350 degrees for about ten minutes.
