Hi, I'm Chef Mariko. Today, I will be showing you how to make ricotta with caramelized onions and rosemary dip. To get started, you'll want to make your caramelized onions. First, get a half onion and slice. You'll want to add the onions to a saucepan. Then, you want to add a couple of tablespoons of brown sugar and a couple of tablespoons of butter. You'll want to cook this mixture on medium high heat until brown. When the caramelized onions are finished, you will want to add them to a mixing bowl. Then, you want to add one cup of ricotta cheese, a half a cup of grated mozzarella, a quarter cup of grated Parmesan cheese. Then, you want to add your fresh rosemary. Here I have a sprig and I'm just going to peel it off, just pull it off and then just mince. If you don't have fresh rosemary, use about a teaspoon of dried flakes. Then, you want to add your fresh chopped rosemary. This is about a tablespoon. Blend all your ingredients together until smooth. Once everything is combined together, put it in a small oven proof baking dish. Bake in the oven at 400 degrees for about 15 minutes.
