Hi, I'm Chef Bryan Dooley from Bryan's Black Mountain Barbecue in Cave Creek, Arizona. I have a restaurant and I've written a cookbook. And today, I want to share a healthy chicken recipe called the Firebird, because just because it's healthy doesn't mean it can't be spicy. So, what we're going to start with here is a whole chicken which I've cut in half. And then, I've sprinkled on some of my famous spice rub right here; so season that up. I'm going to put that on the grill and the grill is a perfect place for healthy cooking because there's, it's a low fat cooking method. So, we're going to get that going, close the lid. The most important thing, we want to take this chicken off when it's a 165 degrees. So, I recommend a metal-stem thermometer, make sure we take the chicken off at 165. Alright. The most important thing about this recipe is the sauce. Alright, so we're going to start with eight ounces of barbecue sauce; I'm using my barbecue sauce, Bryan's Black Mountain Barbecue Barbecue Sauce here, 12 ounces of honey, eight habanero peppers all chopped up; that's add a super kick. One ounce of chopped ginger, the zest from one whole orange, the juice from that orange and that's it and then, we're going to take this and we're going to put this on a stove. We're going to let that simmer until it comes to a sauce consistency, so it's nice and thick. And that'll take about 10-15 minutes. When we're finished with the recipe, we're going to take our chicken off the grill; coat the chicken with our sauce. Garnish with scallions, it's about two ounces of scallions and two more habaneros as if it weren't hot enough to garnish the top. And there you have it, a healthy chicken recipe, the Firebird.
