Hey, guys! What’s going on? I’m Chelsea Silverman, executive vice president, health director, and raw vegan chef here at Juiceateria. And, I am super excited to show you how to make a layered avocado dip with all fresh vegetables. So, we’re going to use avocado puree, our fresh spinach, our fresh veggie medley with tomatoes, yellow pepper, green pepper, and fresh onion, some cilantro, some fresh lemon, and we’ll use a little bit of pea sprouts and some celery for decoration in the end. But first, we’ll start with our layers, and we’ll start with our spinach. We’ll just use a little bit, a nice little handful. Again, I’m using a little bowl – you can feel free to use what you’d like in your home. I’m not making this for a lot of people – just my production crew. And then, we’ll take some of our fresh veggies. I have some cucumber, some tomato. I have to find my yellow and green peppers, and there’s some onion in there that I’d love to dig out for some nice flavor. Then, we’ll take our avocado puree and a nice spoon, and we’ll just spoon that on top and smooth it out like a layer. And, so, you’ll probably need a good two tablespoons of your avocado puree. And then, what I want to do is take some lemon and sprinkle it a little bit on the avocado. And, if the pits get in there, it’s okay, they’re full of nutrients. And then, we’ll just take a little bit of cilantro for some flavor, and sprinkle it onto our avocado puree. And next, we’ll do it all over again. A little bit of spinach right on top of that puree. Don’t be scared to pile it on – spinach is full of so much. You get Vitamin K, there’s protein in there, some calcium. And then, you’ll take your veggies. This is almost like guacamole, so it’s almost like another fiesta! And, again, another layer with your puree. Smack that into there and roll it around. It’s almost like art when you do dishes like this. And, you just dip it in and just roll it around. It’s so nice, and it’s even relaxing. One of my favorite things when I create my meals is getting artistic. So, you’ll finish up your puree right there, grab your lemon, and again sprinkle some nice lemon juice right on top. This not only adds some flavor and a little punch, but it also keeps the avocado from browning and it keeps it fresh. So, it’ll last maybe a few hours. And then, you’ll sprinkle some cilantro right on top, and you’re good to go. And again, you can use celery to dip it in, and you can also use some pea sprouts which are, again, filled with protein, for a little bit of décor. Voila!
