Hi, I'm Victoria Shanta Retelny, Nutrition Expert and Author of The Essential Guide to Healthy Healing Foods. Today, I'm going to be showing you how to make chicken with artichokes. Really simple recipe; you just need marinated artichoke hearts, garlic and Parmesan cheese. So, what you do is you place your artichoke hearts in your food processor and just put it right in there. Make sure you get the marinade in there, makes it taste really good. And then you put cloves of garlic and you don't even need to mince them beforehand. Just put them in. You put this all in your food processor; you just mix. And then I've already, I've already seasoned my chicken breast. So, I'm using chicken tenders today, but you can use a whole chicken breast and actually stuff the artichoke in it. So, basically, you just put a little olive oil over it, salt and pepper and what you're going to do now is taking your mixture, you're going to take your artichoke mixture and put it right over your chicken breast. Heat your oven to about 350 degrees so it's ready to go. So, basically, this artichoke mixture forms a little bit of a paste. It's so easy to spread on. So, you're just spreading this right on and artichokes are such a great accompaniment to chicken, to fish, to pork; this could be a great dish for any type of meat. So, basically you're putting your artichoke puree on top of your chicken breast and make sure you liberally put it on because you want to make sure it's spread out throughout the chicken to give it nice flavor. And then, you're going to take your grater and your Parmesan cheese and using some fresh Parmesan, just grate it over your chicken. It gives it that nice, what I call mummy, which is this savory flavor which really does make quite a difference in this dish. There you go. And then you just pop this in the oven, 350 degrees for about 20 minutes and you're all set. So, this is the chicken with artichokes finished and as you can see, you can serve it over bed of greens or pasta, rice or quinoa and it'll be delicious. I hope you enjoyed this recipe.
