Hi, I'm Victoria Shanta Retelny, Nutrition Expert and Author of The Essential Guide To Healthy Healing Foods. Today, I'm going to show you how to make vegetarian broccoli soup. And the first thing you need to do is toast some walnuts, you can use some almonds as well, but I choose to use walnuts, they're higher in omega -3 fats which is great for your brain health. So, toast these for about 400 degree oven for about five to seven minutes and make sure you do check them, they do burn easily. So, you're going to grind your nuts first thing. Put them in your food processor, you grind them up to a fine powder. Now, that these are ground, we're going to add some steamed broccoli. This is about a pound and a half of steamed broccoli. You can either steam it in a microwave or throw on your stove top. It's real simple. Make sure it becomes bright green and it's not overly steamed which won't be as tasty. So, make sure you put your broccoli in there and we're basically going to just put all of these in the food processor. So, broccoli is such a wonderful vegetable, full of nutrients and has a great antioxidant called sulfurophane which is wonderful for your cell health. So, I'm pouring some vegetable stock and then, you're going to blend your broccoli mixture. So, you take your top off and you're going to add just a little bit of milk to this, okay, to give it a little creaminess and add some cumin. It gives it a little bit of a nice scent and flavor and I added just a touch of salt to really bring out those flavors. And then, you're going to cover it up and mix again. And there you have your broccoli soup and we're going to bring that over to the stove, cook on a medium to low heat for about 45 minutes to an hour. Okay, our broccoli soup is ready and here it is. This would be delicious with a dollop of plain Greek yogurt on top or try putting some beans in it, some black beans or white kidney beans that would add a lot of flavor and nice texture to it.
