Hello, I'm Jason Tilmann, executive chef at Triumph Restaurant here in The Iroquois Hotel on 44th Street in New York City. Today, we're going to be making a grilled chicken and goat cheese salad. We're going to use some balsamic vinaigrette so let's get started. What I have is some chicken breasts. I like chicken breasts. You don't have to use chicken breasts. You can use chicken thighs. You can use chicken legs, whatever really your family likes. I have some chevre goat cheese. You can use an aged goat cheese. You can use many different other kinds of goat cheese as well. I have some cherry tomatoes that I'm going to throw in there for some texture and some color and then baby greens, okay. So what we're going to do is we're going to add our baby greens and this is a great dish because you can make a big bowl of it. You can make it on a platter, however your family likes. We're going to put a little bit of salt and a little bit of pepper. I'm using a balsamic vinaigrette. If you don't like balsamic vinaigrette, that's fine. If you want to make your own, it's really simple to make. You don't need to make your own, you can buy it, you want a raspberry vinaigrette, extra virgin olive oil and balsamic plain, whatever your family prefers, a little bit of balsamic vinaigrette. We're going to go ahead and add the goat cheese on top of those greens and those cherry tomatoes. We're going to go ahead and mix it up. It's so simple. Now you can actually put the chicken inside this salad if you'd like as well or you can do what I like to do because I like to see everything and I like to put it on top so I can see that chicken, alright. So we're going to put that in a bowl. I'm using a bowl. We use a bowl here at the restaurant. If you don't want a bowl you can put it on a platter or a plate if you'd like as well. Alright, then we're going to take our chicken breast and we're going to put some nice pieces of that chicken on there. Now the chicken, a little salt, a little pepper on the grill and it's so simple. It's so healthy and so simple, it's an easy dish for you to make for your family as a starter or as a main course, grilled chicken and goat cheese salad. I'm Jason Tilmann. We'll see you next time.
