Hello. I'm Dorangela Bobet founder of Two Prince Bakery Theater. Today, I'm going to show you how to make gluten-free lemon squares with lemon cake mix. Let's begin. First you will need a box of gluten-free cake mix, yellow cake mix. There's not really a lemon one readily available, so what I'm going to do today is I'm going to add 1 1/2 tablespoons of lemon extract to the cake mix to give it the lemon flavoring. We will be needing one stick of butter, an eight ounce package of softened cream cheese. We will be using a third of cup of white sugar, one egg, one half cup of freshly squeezed lemon juice and we're going to zest a lemon. We going to get that yellow cake mix, put it in the mixing bowl like so. And if you don't have a mixer, like an electric mixer, you can use a hand mixer. That will work just fine. And since they don't make gluten free lemon cake mix, we going to add our own extract to make up for it. The one and one half tablespoons we talked about previously. We're going to measure that out right now. That's going to give it a nice lemony flavor. So one and one half tablespoons. A little bit messy. There we go. It smells nice and lemony. We're going to add one egg. Let's get the mixer going now and then we're going to add the one stick of butter. But I want to get this incorporated first for a little bit. And while that's going, I'm going to start getting my butter broken up. You can either soften this a little bit more but since it's going to be more of a bar rather than a cake, it could be colder. The butter could be colder. So I'm going to put it in that way. Our dough seems to be ready and incorporated so now we're going to take it out and get it ready to go in to our pre-buttered baking dish. Now we're going to take our mixture and put it, spread it out nice and even in to our baking dish so it cooks evenly. While that is baking for 12 to 15 minutes, we're going to start making our topping for our lemon bars. We're going to put in our cream cheese. Get in there. We're going to put in our sugar and our lemon juice. Get that going. Now we're going to mix that until smooth. Now that our mixture is nice and smooth, we're going to add a lemon zest of one lemon. What the zesting does is releases the oils of the lemon because all the oils are in the peel of the lemon. So when zesting it, you are giving it a more intense flavor and it's really nice. So especially in this topping. Plus you will see the little flecks of yellow and it will be pretty. Our timer has beeped so we're ready to get our cake from the over. Smooth it all the way around. And then to this, we're going to add our reserved crumbled topping from the other part of the cake that we held aside. Going to crumble on here. A little bit messy but that's okay. Now we're ready to put it in the over for 15 minutes or until golden brown. Our lemon bars are now ready and we're going to take them out of the over. And now we're going to set it and let it cool for about 15 to 20 minutes so we can cut it.
