Cold Avocado Soup With Pepitas

This is Sharon Palmer. I'm a registered dietician, and I'm going to show you how to make cold avocado soup with pepitas. To make our chilled avocado soup we're going to start with one ripe avocado that's been sliced and we'll place it the blender of a, the container of a blender. This is very small blender because this soup makes two servings, so we're placed our sliced avocado in the container of the blender and then we will add half a cup of Greek yogurt, plain non fat Greek yogurt, the juice of half of a lemon, a forth cup cilantro, a forth a cup of green onions sliced, one clove of minced garlic, a pinch of sea salt and black pepper and three fourths cup of vegetable broth. All these things get added to the blender container and then I'm going to add a pinch of smoker paprika for a nice smokey hot flavor. Put the lid on the blender container. There we have it all nice and blended. You can simply pour this into our container. This makes two servings and it's a nice chilled soup. You can actually refrigerate it a little bit longer to give it more of a cold temperature. Garnish it with a little extra smoke paprika and our pepitas, which are pumpkin seeds.
