Hi, I'm Vicki Chelf, and I'm the author of Vicki's Vegan Kitchen, and I'm gonna show you how to caramelize onions in the oven. And we're going to just slice quarter inch thick each. So, you don't have to be fussy, it doesn't have to be exact, but they have to be generally about the same size, all of these. So I've cut up some other ones earlier today, but we'll mix them all together, and actually, we don't need them all. Put these over to the side. I'm gonna use, some of the recipes online for this call for a quarter cup of olive oil, and you don't need it. I'm using just five pounds of onions and just about 2 tablespoons, oops, maybe a little more than we need, but we're using about 2 tablespoons olive oil, and it's plenty. And I think it's good to not put more oil or more salt than we need in our recipes. So I'm taking about 2 teaspoons of sea salt. This is a beautiful grey Celtic sea salt that I like to use, and we're just going to mix it up. I'm going to use my hands for this, and separate the rings a bit, and I will put it in my cast iron skillet, but you want to have a lid on it, an oven-proof lid. I preheated the oven to 375, a lot of recipes call for 400, but the smoking point of some olive oils are close to 400, so I've decided to try it at 375 and it works. It's just fine. So, we will put the lid on, and even if it doesn't fit perfectly, because it's full, it's gonna be okay. And put the lid on, and we'll put it in the oven and just let it bake for, and, you know, the timing doesn't have to be perfect. I will, I've done it at different times, I've actually even gone off and forgotten it and come back later and it's working. So, we'll put it in for about an hour, hour and a half, but we'll stir it after about 15 minutes, and then we'll leave the lid ajar. There we go. Delicious, easy caramelized onions.
