Hi, I’m Rosie Battista with SleepingNakedAfter40.com, and I’m here today to show you how to make a sweet potato pumpkin pie. And, the beautiful thing about this pie is that we are making this pie with no flour and no refined sugar. So, we need to start with the crust, and for the crust I have a half a cup of almonds, half a cup of pecans, half a cup of walnuts – raw nuts with nothing, no salt, no nothing. Half a cup of raisins, and a half a cup of dates that I soaked overnight and drained. We’re going to dump all of this into our food processor and process it until it gets – you’ll see the consistency – it gets the consistency of a crust that we can spread into our dish. These are the dates that I’ve soaked – it’s made them nice and soft for blending raisins. That’s your sweetener and your stickiness for the crust as well. Now, I have nuts – can do this in any combination that you like. You can kind of see that it’s starting to make, like, a dough-like consistency, and you can feel it. Check it out, perfect. I like to have some of the nuts a little bit chunky – it adds a nice texture to the pie. So, then we take our crust, going to stick it into our pie dish. I like to use different kinds of dishes. Heart-shape dishes are always fun to remind you of the reason that you’re cooking up this delicious food. And, we’re just going to start to spread it like we would a crust, but we don’t have to go through all the hard work of rolling out a crust and all that. This is just so easy, so healthy, so simple. And, you can push it up the sides, and you can actually, really, you can use your fingers too, and just kind of make it pretty and covering the whole bottom of the dish, and spread it around. Gorgeous, and ready for our delicious, creamy insides. Okay, for this simple pie, again, we have a can of organic sweet potatoes. You can use already-baked sweet potatoes that you have and take out the guts from the skin. You can surely use that, but this is really easy, really delicious. So, we have one can, whoops, of sweet potatoes going right into the blender. Now, we have one can of fresh organic pumpkin. You want to make sure that you’re not using the pumpkin pie filling that’s already sweet with all kinds of stuff. The only thing in your ingredients should be your pure and naked pumpkin. Now, we have half a banana, we have half a cup of hemp milk. You can also substitute that for almond milk if you’d like. We have two eggs, and for sweetener I’m using date paste, which is dates soaked in water and then blended together. So, the combination is one cup of dates to two cups of water. I’m adding in two teaspoons of vanilla, and I’m adding in two teaspoons of pumpkin pie spice, which already has in it some cloves, nutmeg, some ginger, some cinnamon. Going to mix this up. Okay, now we’ve got this all mixed together. Oh my gosh, that smells so good, so like fall, so like Thanksgiving. Now, we’re just going to spread the mixture right into the nut crust. So, we’re going to put this in the oven at 350 for 40 minutes, and get ready to have your kitchen smelling amazing. Okay, so after 40 minutes, this is the delicious, amazing pie that we have, and it smells so good, which is why I have a fork in my hand, because I’m really tempted to just dig in. However, I promised to give this to someone as a gift, so I’m not going to do that. But, this pie is amazing, you saw no refined sugar, really really healthy, really really great for you.
