Hi, I'm Jessica Young. Everyone is always asking me for the next super food trend, and I have to say it's with purslane. Purslane packs more omega 3s then your average fish oil vitamin. Today's salad is inspired by the Mediterranean dish fattoush which uses purslane as it's main ingredient. I'm making the salad and I'm going to start with a big bowl of clean arugula. I'm going to have my clean purslane here which is just the leaves of the plant. And the stems are removed and I cleaned it just like any other salad green. I'm going to put this into our salad right into the salad mix. To the salad I'm going to add some gorgeous heirloom tomatoes. I'm going to also add some chopped cucumber and radishes. These are all the elements of a traditional fattoush salad. To finish this salad I'm going to use a dressing that I already made that's made up of lemon juice, olive oil, and sumac. This is the traditional dressing to go with the salad. You can find sumac in your local middle eastern or Mediterranean market usually. So I'm just going to shake it up and pour it over the salad. This goes on, you can toss it up lightly. Toss it up like so. Get all the ingredients mixed up. And then last but not least our crispy pita chips. These are whole wheat just so we can be extra healthy with our super foods salad. This goes all over to finish. Thanks for watching and remember purslane is definitely the next big thing in food.
