Crabmeat Avocado Salad

The only thing better than a regular avocado salad is an avocado salad with wonderful crab meat. Make a crab meat avocado salad with help from a self-taught pastry chef in this free video clip.

HI, my name is Michael Mignano. I'm a Chef, owner of Main Street Cafe in Port Washington, New York, and today we're going to make a crab meat avocado salad. So we have our crab meat about six ounces and I have about a tablespoon of Dijon mustard, about a tablespoon of mayonnaise and about a half of a fresh avocado, half an onion, about two ounces of fresh pepper and we have a little ring that I made out of a coffee cup. This sort of you can do at home to just sort of arrange the salad. Okay, we're going to mix together everything, crab meat. Now what's important is that when you, when ever you make a crab meat salad is don't over mix otherwise you loose all those lumps. Add our Dijon mustard and add our mayonnaise. We're going to chop some fresh dill, give it a nice aroma. Now the difference between this and a crab cake is that your not really adding any egg to bind it together. But it has a lot of similar ingredients. We're going to dice up some onion, throw that right in. Now we mix last. We have some fresh lemon zest it's got a little bit of zing to the avocado. I'm going to say that, I'm sorry. Give a little zing to the crab meat. Add a little bit of salt not much because mayonnaise is salty and some cracked black pepper and I'm going to give it a bit of a mix. Very lightly mix it together just so all of the ingredients, so we have a little bit of a mixed green salad. We're just going to slice some fresh avocado. You can just sort of have that just laid down and sort of fanned on the plate. We have a little bit of a makeshift little ring we're going to put our crab meat in this and give it a nice shape and make a nice clean presentation. You know there's very limited things you can do with crab so the more structural you can make it the better it looks. And you just raise that right up and then we have a little bit of a balsamic dressing. You're going to drizzle that right over the salad. Just garnish a little sliced avocado right on top. And there you have it.
