Hi, I'm Randy Rabney from I'm a coach, a chef, and an expert in teaching people how to have the freedom to enjoy real food without getting fat. And this is caramelizing vegetables in the oven. When we caramelize something what we want to do is brown the natural sugars that are in the ingredient. And today, I'm going to show you how to do that by using cauliflower and carrots. Cauliflower can be a very bland vegetable but when we caramelize it, it becomes sweet and almost nutty. And it's really easy to do. And I'm going to show you how to do that today. So what I'm starting with today is a very hot oven. I've preheated my oven to 450 degrees and this is going to help us bring out the sweetness of the vegetable. Because it's the browning that we want to occur. And I've taken the cauliflower and I've taken the carrots and I've already have them here on this tray. I've cut the cauliflower into florets and I've cut the carrots into nice thick slices. Carrots are already very sweet and they are going to get even sweeter and more delicious. You'll see with the cauliflower is in uneven pieces. You don't need to worry about that. In fact these very small pieces are going to get crispy and brown. And it's going to be the most delicious part of our end product. So what I'm doing is I'm just taking some extra virgin olive oil. I'm giving the vegetables a nice coat of the sea salt and the olive oil. And then I'm going to spread it out because I want everybody on this tray to have room. If you have too much on one tray and you have things too close together you are going to get more of a steaming effect. And then we are not going to get that nice caramelization that we are looking for. And now we are going to put our vegetables in the oven to caramelize them. And now remember this is a 450 degree oven. And so we are just going to put our vegetables in. And in about 10 minutes they should be ready and we'll take them out. Time to check our vegetables. Oh they look fantastic. So see how beautifully brown this is. That's the caramelization that we are looking for. And it's these dark bits that are the most delicious. They're my absolute favorite.
