Hi, I'm Randy Rabney of The Conscious Plate. I'm a coach, a chef and an expert at teaching people how to find freedom in eating real food without worrying about getting fat and this is how to make a healthy lunch menu for a ladies' luncheon. When I think about making a luncheon and I think about entertaining, I of course think about nourishment but the other thing that I think about is having time to enjoy my guests. So what I love to do is plan a menu that allows me to do most of the cooking beforehand so that I'm not trapped in the kitchen the entire time while my guests are there and I can actually spend time with them. So today's lunch menu is going to feature a frittata. If you're not familiar with a frittata, it's an Italian version of an omelet and I love eggs. They're so good for us, they're a great source of protein and when you're talking about healthy food it's important that you start with the healthiest ingredients. So I always start with either organic and/or farm fresh eggs. Frittatas are great at room temperature. They're also great fresh out of the oven so it's a perfect thing to make for a luncheon when you want to be able to spend time with the people who you are eating with. Some great flavor tips for frittatas are spinach, onion and Parmesan cheese, that's one of my favorites but I also like to vary them seasonally. So in the Spring, I love to make my frittata with fresh leeks and asparagus and in the Summer I love to make my frittatas with tomato, basil and zucchini. This way you can prevent boredom and you can also take advantage of what's abundant in the season. For a side dish along with a frittata, I always go with a simple salad. I love to use arugula. It packs so much flavor and so much nourishment. Along with the arugula I either use some grape tomatoes or maybe some Parmesan Reggiano and I then dress it simply with either some good extra virgin olive oil and some fresh lemon juice and unrefined sea salt or extra virgin olive oil, balsamic vinegar and some unrefined sea salt and then, of course, people love to have dessert. Personally, I don't have that much of a sweet tooth but I know that a lot of ladies like to have dessert with their luncheon. So, I would recommend some chocolate dipped organic strawberries.
