Hi, I'm Brenda Cusick, the Avocado Diva, and today we're gonna make a wedge salad, an updated wedge salad and avocado from California. So here are some of the ingredients we need. We need avocados, obviously. We're going to need some bacon, some cooked chicken breast, some soft lettuce, like a butter leaf or a red leaf lettuce, some bleu cheese, and then anything else you might like to put on your salad. Maybe some heirloom tomatoes, maybe mushrooms, carrots, whatever you like on your salad. So we're gonna make an updated wedge salad, and wedge salads were really popular in the United States in the 40s and the 50s, but for 2010 and later, we're gonna make a wedge salad with one of my heirloom avocados, and I can't decide which one. This is a McArthur, I have a Fuerte, Pinkertons, but I think I might use this really dark round guy called a Reed. And one of the ways I can tell if the Reed is ready is he's turned black, and I'm gonna take his little stem off the top and look inside, and you can see it's a bright green color. So now we're gonna cut up this Reed avocado into some wedges. And I like to always use a Teflon coated knife so it helps the avocado not turn brown. And now we have these nice wedges, and we'll just be able to peel the skin off of this avocado. Summer avocados like a Reed peel very, very easily, oh there you can see, it's just coming right out of his skin. And that will make for a beautiful wedge salad. And we're just gonna rip up some nice, soft lettuce, because it will be a good contrast to the crispiness of the bacon, and the creaminess of an avocado. And we'll piles some lettuce on our plate here. And now we're gonna put our beautiful wedge of avocado right in the middle. And a good thing to do, put a little lemon, that will spice up the whole salad. And then you should always put a little bit of salt on your avocado, 'cause it's very bland actually. And with that lemon and salt on there, just makes it that much tastier. So now to finish up a traditional wedge, we need some bleu cheese and some creamy dressing, but we're also gonna make this super protein rich by adding some grilled chicken to it. Some bacon that I've already fried and cut up into little bacon bits, and then our bleu cheese. And like I mentioned, you can add any kind of other vegetables that you might like, so I'm gonna add a couple of tomatoes. And then how 'bout a little bit of mushrooms. To make the creamy avocado salad dressing, I use in a food processor a cup of buttermilk, a half a cup of Greek yogurt or low-fat sour cream, a whole avocado cut into cubes, and the skin off of course, a couple of green onions, a half of a jalapeno with the seeds taken out, and some salt and pepper to taste. Whiz it up in your food processor, and it's delicious on all kinds of salads. Thank you for joining me, this is Brenda Cusick.
