Hi, I'm Brenda Cusick, the Avocado Diva, and today we're gonna make a raspberry and avocado salad, a perfect summer salad from here in California. So some of my many ingredients are lemons, and avocados, avocado oil, avocado honey, a mixed lettuce salad, fresh raspberries, fresh blackberries, honey pecan, and raspberries smashed up and soaked overnight in a white wine vinegar. First we're gonna build our salad by putting our fresh lettuce out, and then we're gonna put a generous amount of fresh raspberries, and they also had blackberries at the farmers market, so I'm gonna put some of those too. They're really fresh and delicious. And nothing goes better with fresh raspberries than some creamy avocado. And I'm gonna show you how to cube this up. I've already quartered it and took the pit out. So cube up the avocado, because it has a nice hard shell, we can go gently through the flesh with our Teflon covered knife, and the reason we would want to use that kind of knife is it doesn't make the avocado turn as brown as quickly. Alright, and then now that we've cubed the avocado, we're just gonna spoon it out here and let it fall all over our berries and salad. And now we are gonna make a vinaigrette, and I'm also gonna show you how to make some crunchy spicy pecans, that will contrast nicely with the soft berries and the luscious avocado. There's a really basic recipe for all vinaigrettes, you need one part acid and two parts of oil. So for our acid, I took some white wine vinegar last night and I just mashed up about four or five raspberries into it. So this is our acid. And I'm gonna put it in a big bowl here. And now, I'm gonna use avocado oil. Here in California, sometimes when we have extra avocados, the farmers will take them to an olive press and they have the avocados pressed, and if we're lucky, we get avocado oil. It doesn't happen every year, so if you find it, it's very rare, and you should purchase it. And then I'm just gonna stir it up. Did I say dressing? We're gonna put it over our salad. Let's talk about how to make the spicy honey pecans that will add a nice crunch to the top of this salad. It's actually very simple to do. In a saute pan on your stove top, you're gonna heat up a little bit of oil, I used avocado oil of course, but you could use olive oil, or butter, any kind of oil you would like, saute those pecans a little bit, and then drizzle them with some honey. And of course, I used avocado honey, and I wanted to show you how dark this avocado honey is. So let's look at our salad. Nice beautiful bed of lettuce, and on top of it we have berries, our berry vinaigrette, and of course these delicious sauteed pecans made with the avocado honey. I'm Brenda Cusick the Avocado Diva.
