Hi, I'm Brenda Cusick, the Avocado Diva, and today we're going to make an avocado and lentil salad and believe it or not we're going to do something really special. We're going to make some pickled avocados and put them in with our lentils and the flavor from these pickled avocados is going to blend nicely with these lentils and make a really cool, hearty, refreshing salad. So to make a pickling liquid is pretty basic. People have been doing this for hundreds of years. You take a vinegar in this case, I'm using an apple cider vinegar and we have about a half a cup of that and then we're going to put in one and a half teaspoons of salt and about three tablespoons of sugar. So a pickling liquid is often very you know, kind of sugary, spicy, salty and avocados are so mild and bland that they'll soak up all these flavors and it's very delicious. So what you do is put these into a saucepan and you just boil it down, actually you are just not even going to boil it. You're just going to kind of cook it so that the sugar and the salt will disappear and then we're going to add some other ingredients so that it has some really good flavors. So you're going to add some garlic and just put in the whole cloves like that. We're going to put in some jalapeno and I want to show you the jalapeno inside. It has seeds. We don't want to use the seeds because they are very very hot. We're going more for the flavor than the heat so just some pretty slices of jalapeno and then about oh a third of a cup chopped up cilantro and then we're also going to reserve some of the big pieces of cilantro that we can put in the jar with the avocados and it makes it look really pretty. So once the sugar and the salt has kind of melted, you put those other ingredients in there and just let them sit in the hot liquid but don't keep cooking it and then you need to let this also cool down. You can either do it on the counter top or in your refrigerator and I have actually already cut open a Reed avocado and you want to also put in some of the sprigs of cilantro and I like to also put in a couple of cloves of garlic because it looks really pretty and then when you get it all full and you have your nice pickling liquid, you just fill up the jar with the pickling liquid. Today we're going to make a lentil salad and to prepare for that I took some green lentils. So I cooked these in some salted water according to the package directions, drained them off and then let them chill in the refrigerator overnight. And the salty element is what we just made, right, these delicious pickled avocados. So let's just take a few chunks of those and put them right on top of our lentil and then we're going to add a couple other delicious elements, tomatoes and some purple onions for color and for some flavor and bite and then we just stir all of those up and it would make a beautiful side dish or almost any meal.
