Hi, I'm Chef A.J. Black, with Il Tesoro in New York City. Welcome to my recipe, it's basically Chilean sea bass stuffed with shrimps and crab meat. And we going to do a little bit of a spin on it. We're gonna have a stuffed inside a little bit of couple of spices basically Sicilian-based go in it. So let's have our Chilean sea bass. Basically skin on, that's the way I like it, and here we're basically mincing the shrimp, nice and fresh pink, and this is the crab lumps, and the ingredients are going to be very simple. We gonna have a little bit of garlic on top of that, garlic oil basically, with a couple pieces of garlic. Parsley and chives go in together, and I like the Batchian chives, and we going to have some roasted pepper, and some roasted tomato. And we going to cut the fish right close to the middle, but not all the way in. Open like right there. And we're gonna mince those nicely, we don't need all this amount, but we gonna, we gonna make it. And you can get to my recipe on the Sicilian pesto, and that will help this flavor tremendously, it help the fish, it's basically one of my favorite. And, we get a little of tomato, roasted pepper. So basically it's an Italian flag. So I'll basically have a little bit of this, and we are done. Look how beautiful it is, all of that. The stuffed sea bass, shrimp and crab meat, a la Toscana. We have artichokes, sun-dried tomato, and Sicilian pesto, white wine, lemon, fresh mushroom, mixed shitaki and maitake, and our garnish is radicchio and endive, and finish with olive.
