Hi, welcome to Il Tesoro. I'm Chef A.J. Black, Executive Chef of Il Tesoro Ristorante. We have, we're making fish stew; zuppa di pesce in Italiano. It's an Italian fish stew but we're going to have a little bit of products to make it. So, the ingredients is clams, mussels, calamari and lobster, fresh sardines and sea bass, garlic, shallots, onion and fresh tomato and cherry tomato sauce. And I'm going to start on this here and we'll show you how it's done. And here we're starting from the fire, olive oil and onion. And we're going to have here the lobster is split. You find this everything in zuppa di pesche. It's basically even everything on the fried and we'll go for the second thing in here; we've gotten a little bit more kick into. So, we'll go with the first things that it's going to take, take more time which is the seafood and lots of people thinking that, that's a long time dish. I like to brown all my garlic, onion, shallots and I like to have them brown. So, this is going to take a lot less time than I expected. We're going to finish it in the oven. I like to finish it nice and slow in the oven. Tomato, this is cherry tomato in here, San Marzano cherry tomato and we're going to add a beautiful white Chardonnay. And we've got some spices in here, basil and then we're going to finish it in the oven. When it's almost finishing out, add the salmon. Alright zuppa di pesche; fish stew.
