This is Chef A.J. Black with Il Tesoro, chef and owner of Il Tesoro Restaurant in New York City, and here we're going to make some spicy tomato dip for our calamari fritti. So we're going to start with a few ingredients. The first ingredient in here we have a cherry tomato. It's basic tomato bolatti, but it's cherry. They actually make it in Espano in Italy, basil, garlic and I like to have some unexpected items in my fresh tomato also and a little bit of chile. So we are going to start with the chopped tomato, garlic in a hot bin and we're going to cook the fresh tomato and add to it some spices and we'll go from there. Okay we're going to cut some tomato here. We're going to dice it basically and this we're going to have a very nice ripe diced tomato and I like them almost perfect and when you cut the tomato you have to be paying attention to where you're going with the knife. This is basically chile calabrese so a couple cuts of chile calabrese and a little bit of parsley here and chives. I like to add to it some salt and black pepper and we'll go ahead and mix it and I'm going to add a pinch of borinchino, a pinch of borinchino. Now it's starting to get brown. I'm going to add my whole basil and I like to leave the leaves as big as possible and I'm going to add the tomato, saute the tomato fast. I've got my fresh tomato in first of course, and I'm gong to add some sea salt to it and I'm going to add in the end my cherry tomatoes, Dose's Italian some marzano cherry tomato. It's perfect and while I'm doing that I'm going to do, I'm going to fry some calamari so we can see how delicious it is to get Dose's fresh calamari and I'm going to have like one portion of fried calamari.
