Hi there, my name is chef A.J. Black, chef and owner of Tesoro Ristorante, NYC. Well, today we have our Dover Sole. It's our first thing to start with, the ingredient is Dover Sole, is fresh sole, and we have flour, white wine, lemon, butter. And today, we're going to put a twist on it, sharp colored tomato. Those are cherry tomatoes, plum tomatoes, all kinds of fresh, organic tomatoes. So, we're going to start with heating up the pan, and olive oil, and we're going to let it get hot, because we want to crisp this Dover Sole. And we're going to do it in two stages, get in the Dover Sole in flour and we're going to let it rest for a minute. And we're going to get ready with the tomatoes. So, we're going to get some chopped tomato on that, and we're going to get some lemon ready for it. So, I use around two lemons for the Dover Sole, one spoon of butter and white wine, I use Chardonnay, Sicilian Chardonnay, an excellent wine for the Dover Sole. So, we're going to go with the first stage in here, it's totally, Dover Sole is going down. I like to have it this way, it's large Dover Sole, getting in the oil. And we're going to give it a couple minutes on each side. So, a spatula, I'm going to need that, and we're going to need to chop some tomatoes here, to get the Dover Sole ready. So, and then, I get it chopped up nice and easy. And I'm going to season it with a little bit of parsley, basil for the topping, and chives. And I like to have my sage always, when I do my Dover Sole, it's like very important for fish to have sage. You have to basically feel the color to be nice and golden, before you add anything or you flip it to the other side. And that's chicken stock, this is the color you're looking for, it's basically a golden color. Some of our tomato is going in the oven with that beautiful fish. Dover Sole lemony alla, chef A.J.
