Hello, my name is Marsha Orosco. I'm the Executive Chef at The Dome Restaurant Bar and Lounge here on Coral Gables, and today I'm going to be demonstrating how to prepare seared salmon with lemon juice, butter and some fresh parsley. So, the first thing we're going to do is we're going to start with our beautiful piece of salmon here. We are going to season it with salt and pepper. I'm using Chilean farm raised salmon and beside me I have my pan getting nice and hot with a little bit of extra virgin oil. And we're going to season both sides of these salmon and we have our hot pan here, just hold the pan slightly away from you so that way you don't get any oil on yourself. And we're going to let this salmon sear until it gets a nice golden brown. And then, we're going to finish it in the oven. You can see here the salmon is searing pretty quickly. You can see how it is already starting to cook on the sides which lets you know how quickly the salmon is searing. So, now, I've just flip it over and what I'm going to do is I'm going to take my salmon now and I'm going to put it down in the oven so we can continue to cook. But, as I said before, ta-da, I've already started one. So, we're going to bring our pan over here and what I'm going to do is I'm going to take some of this butter and I have a little bit of extra virgin oil in the pan, but I'm going to melt the butter, just a little bit. Here we go, we're just going to add it right in the pan. And since you can see here that the butter is melting and I'm going to add a little bit of this lemon juice, just give it a slight bit of a kick. So, I'm going to take this salmon right over here, put it right on our plate. And I'm going to take a little bit of this lemon brown butter sauce so that I can incorporate some additional flavor here to the salmon. Oh, doesn't that color look absolutely beautiful? And I'm just going to garnish with a little bit more of the fresh parsley. And there you go, we have a seared salmon with lemon juice, extra virgin olive oil, butter, freshly chopped parsley.
