Hi, I'm Chef Bailey, a private chef with Kitchen.com, and I'm standing today in the kitchen of one of my favorite restaurants, Freda's Caribbean and Soul Cuisine. Today I will be making a curry potato using coconut milk. First you want to take some potatoes, about two pounds or so, diced, chopped I should say and salt them lightly like so. You also want to add some black pepper to that, some chopped onions and some curry powder. And you just kind of want to mix that up like so, make sure all that curry gets on each potato and this is a great dish for your non-meat eaters. You'll find that it's really great. They get to enjoy the curry flavor even though they might not enjoy meat and what you're going to do is you're going to add this to about two tablespoons of oil and just let it saute for a little bit. You're going to add about a cup of water and about I'd say half a cup of coconut milk. Let that cook for about 20 minutes until the potatoes are cooked and then you can add one Scotch Bonnet pepper to that just for a little extra spice and here is a sample of the curried potatoes using coconut milk.
