Hi, I'm John Coletta. I'm the managing partner and executive chef of Quartino Ristorante here in Chicago. We're located on the corner of Ontario and State street. Today, we've got a great arugula and pancetta salad. This baby wild arugula was just picked out of the garden this morning, and as you can see, look at how flavorful it looks and fresh. Pancetta is Italian bacon, and what we've done is we've sliced it paper thin, we've put it on an oiled piece of paper, we've put it in the oven, and we've made it into crisp, very much like bacon. I've got my lemon juice in a bottle ready to go. I've got some incredible extra virgin olive oil and what we'll do is we'll add the arugula to the bowl that we're going to be mixing. We're going to add a touch of lemon juice and again just a sprinkling, some great extra virgin olive oil and again we want to use very high quality olive oil. We got some freshly ground black pepper, some sea salt. If you don't have sea salt, use Kosher salt. If you don't like black pepper use white pepper or any pepper for that matter. Now we're tossing this very liberally, and what we want to do is then plate this right here. Look at that, OK. And now we take these crisp pieces of pancetta, put them around and we can even break a couple to give some contrast and here you have an amazing summer arugula salad with crisp pancetta.
