Hi, I'm John Coletta. I'm the managing partner and executive chef of Quartino Ristorante here in Chicago. We're located on the corner of Ontario and State Street. Today, we're going to make this amazing Summer roasted pepper salad. My mother used to make this as a kid and these were amazing. I would wake up on weekend mornings, look at these roasted peppers. These are charred. They're rubbed with olive oil. They've got this amazing intense flavor and then what happens is you remove these but leave some of the char on there and what you want to do is look at this, we've removed the seeds, I mean this is absolutely incredible and now we cut these. And don't worry about making them so perfect. The more imperfect, the better it's going to be and we just cut this and leave some of the char on there. This is a great, great, great Summer salad and basically we're going to add some Italian parsley, a little bit of garlic and some capers, some fabulous extra virgin olive oil, some sea salt and some ground pepper. I like to use black pepper for dark things and white pepper for white things and from time to time I'll even blend the two together. So now we take this together and we're going to put this in this bowl, look at those colors. I mean doesn't that speak of Summer? Now, we add some Italian parsley. This is a simple, simple dish you can do in a matter of minutes. There's some garlic. We've got some capers. I like to use the ones that are packed in salt and you've got to wash that off. We've got some fabulous sea salt, some great freshly ground black pepper to pick up those flavor notes and some high quality extra virgin olive oil. Then we place this on a bed of arugula and look at this salad. I mean you've got to smell these flavors. I mean I wish you could, look at this. And now this is a great salad you can make the day before, even several days before, take this on a picnic or just enjoy it that evening. This is absolutely incredible. Again I'm John Coletta.
