Hi, this is Registered Dietitian Vandana Sheth. Today, I'm going to show you a simple recipe on something you can take to a friend's house for a potluck. It's a vegetarian potluck dish. It's inspired by Mediterranean influences. So, I started out by using some arugula, you can use any greens you'd like; but, I like the little peppery black pepper spicy taste of arugula. And to combat that, I've use some fresh figs. I've also added some almonds. I've used some candied walnuts, some black olives, of course some feta cheese and if you'd like to keep it vegan, you can skip the feta cheese and I've added a balsamic vinaigrette. And to add a little crunch, you can add some crushed pita chips and some salt and pepper. So, let's get started. So, you're going to start off with your arugula and just spread your fresh figs. That adds a little nice sweet flavor to it. And figs by the way are wonderful. If you're trying to lower your cholesterol, they're really good source of soluble fiber. Add some almonds and these are heart healthy, adds a little crunch to it; and a little candied walnuts, a few pieces. Some feta, and you can find fat-free feta now and so, you enjoy the taste and you don't have a lot of fat to it. And when you're adding some salt and flavoring to this salad, just keep in mind that feta tends to be salty. So, you might want to taste before you add a lot of salt. I'm going to add some mashed pita chips, just a touch of salt and a little bit of pepper. And we're finally going to finish it off with some dressing and if you're taking it to a friend's house, you want to make sure you add the dressing last thing, right before you serve it, so things don't get wilted. Here you have it, an arugula, fig salad. It's a perfect potluck dish, it's vegetarian. You can make it vegan without the feta cheese. This is Registered Dietitian Vandana Sheth.
