Hi, this is registered dietitian Vandana Sheth. Today, I'm gonna show you how to make a simple lentil, cilantro and feta salad. Lentils are a wonderful source of protein and fiber. So, I'll start off by using already cooked lentils. Pour them in my bowl. Next I'm gonna add some chopped cilantro. Add some shredded carrots. Carrots are an excellent source of vitamin A, beta carotene. Add some feta, and this is fat-free feta, so it's lower in fat. Adds a little extra protein and flavor to the salad. I'm gonna season it with some ground cumin powder. A little bit of salt, not much because feta cheese can be a little salty. I'm gonna add some ground chili powder. You could either add a little bit, or you could skip this step if you don't like it spicy. And finishing this off with some olive oil. We'll just mix it up. And here you have it.
