Hi, this is registered dietician Vandana Sheth. Today, I'm going to be showing you how to make a simple lentil and cilantro salad. So start off by using some already cook lentils. You can either make them ahead of time or you can use a canned version. If you do use a canned version make sure you rinse them thoroughly to cut back on the sodium. You could also buy precooked lentils at the grocery store now. I'm going to add some chopped, cleaned cilantro, add some cucumber; I like to use Persian cucumbers but you can use any cucumbers that you like, and I like to leave the peel on so you can get a lot more of the fiber. Add some chopped tomatoes, adds a nice color and flavor to the salad. Next I'm going to add some chopped onions, and finally I'm going to add some jalapeño, again I like my food spicy so I'm adding some jalapeño. If you want to cut back on this or just not use this that's fine. You don't have to, it's optional. You could even use some green bell peppers in place so it's mild and still adds the color. And next we're going to add some lemon juice, some salt, and fresh pepper. And just toss it up and enjoy. There you have it, lentil and cilantro salad. This is registered dietician Vandana Sheth.
