Hi, this is registered dietitian Vandana Sheth. Today, we'll be making Lebanese lentil soup. You can use any kind of lentils you'd like for this recipe. I like to use red lentils. The reason I like to use red lentils is because they make it very creamy when they're cooked, and they cook really fast. So, I've taken about a cup and a half of lentils, and make sure you wash and clean them thoroughly, and so we start off by pouring some olive oil into our pot. I'm using about a tablespoon of olive oil. Then we're gonna add some onions. And we're gonna cook this for about a minute on the stove. We're next gonna add some garlic. And then we're gonna add our lentils. And we're finally gonna add some water. For about 1 1/2 cups of lentils you'll need close to 5 cups of water. And we're gonna put this on the stove and bring it to a boil. Now that the soup has been cooking for about 20 minutes, I went ahead and added some spices. Some of the spices I like to use are salt, of course, a little bit of salt helps. I use some chili powder, and if you don't like it spicy, you don't have to use this, it's optional. I also use some coriander and cumin powder, and that adds a nice flavor to this. I added that in and cooked it for another five minutes. And here you have it, Lebanese lentil soup. It's perfect, it's creamy, it's tasty and you can garnish it with some cilantro, tomatoes and add a little lemon juice and that just takes care of it. It's a perfect meal. So right here, I'm gonna add some cilantro, some tomatoes, and you can either enjoy it as a dish, or you can have it with some pita bread and make it a complete meal.
