Hi, my name is David Levine. I own Illinois Nut and Candy. We're online at Raisingthecandybar.com. Today, we're making double dipped peanut butter and chocolate pretzels. Chocolate dipped pretzels regardless of their form are super popular but today we're focusing on one type, the peanut butter chocolate dipped pretzel and how you make a double dipped peanut butter chocolate pretzel, well it all starts with the ingredients. First, you need a real smooth and creamy peanut butter, next you need a fresh pretzel and lastly you need a high quality chocolate. So here's what we do, here's the first step. Step one, the day before you are ready to start, you apply your peanut butter to the pretzel. Be sure as you apply it, you apply it evenly and get a nice even coating of peanut butter on it. Once you have the peanut butter applied to the pretzel, you could put it on a cookie sheet and you'll notice if you leave it overnight the peanut butter sets. After you have the peanut butter set, what you are going to do is you are going to use chocolate that has been tempered properly. You could either use a tempering machine like we have here or if you do not have one, you could use a double boiler or you could make your own double boiler setup using two pots with some hot water in between the two pots. The important thing is make sure you stir the chocolate consistently. Now, we have the double dipped pretzels ready to go. We have a pretzel covered in peanut butter and what we're going to do is I'm going to turn off the tempering kettle. We're going to roll it in the chocolate and we're going to let the chocolate cover the peanut butter and then we'll go on to the next rod. Once again, we will cover the pretzel and the peanut butter in chocolate, pulling it out, letting the excess chocolate come off the peanut butter. We'll put it on our cookie tray, covered with parchment paper. After you have completed your tray, what you can do is you can take your tray, put it in a cold box which you may or may not have or put it into a refrigerator. In the fridge, be sure you don't leave it in the fridge for too long because the humidity will cause the chocolate to bloom and turn white. After a bit of time, you have a tray or a plate rather of peanut butter double dipped chocolate pretzels.
