Hi, I'm Marisa Voorhees. I'm a Caterer and a Party Planner and I do it all gluten and dairy freely. You can find me at Today, we're making a dairy-free, egg-free banana bread. I don't know about you, but in my house, when bananas get to this point, I look at them and go, "Huh, I should make some banana bread." And then, I think about all the ingredients I need and I'm like, "Eh, never mind", and then I throw the bananas away; waste of money. So, here's a quick and easy way to make a delicious banana bread. Now, the version I'm making today is going to be both egg-free and dairy-free as well as gluten-free. And the reason for that is because here's my handy dandy trick when making banana bread. If you have a bag of cake mix or box of vanilla cake mix around, add mashed bananas; the seasonings that you need for the banana bread as well the, what the ingredients call for on the package and you'll have yourself a delicious and easy banana bread. So, once you have your mashed bananas, what you're going to do with your bananas is give them a good mash and they'll go into the bowl with your cake mix as well as two teaspoons of cinnamon and half a teaspoon of nutmeg. So, to do a egg-free banana bread, I find that using the chia seed trick as I call it works really well. And here's the chia seed trick, you do two, you do four every tablespoon of ground chia seeds, you're going to do three tablespoons of water. So, my mix calls for three eggs. So, that's going to be three tablespoons of ground chia seeds along with nine tablespoons of water. So, you've mashed your bananas, you've mixed your chia seeds with water and now, you're ready to make your banana bread. So, following the directions on your cake mix package, you're going to add your cake mix to the bowl. You'll add your bananas. You'll add the oil and water if that's what it calls for in your mix, just follow your mix; mine calls for oil and water, as well as your seasoning in. So, it's two teaspoons of cinnamon and half teaspoon of nutmeg go in and then the chia seeds. These are the egg replacer; chia seeds are great for baking because they have that egg consistency. So, the thing to remember though is unlike eggs that help things rise a little bit more, your chia seed baking dishes are going to be little bit more dense and because they're dark colored, I tend to prefer these for fruit breads as well as chocolate mixes. So, once you've mixed, what you're going to do is you're going to place your batter in a loaf pan that you want to lightly grease and make it, bake it for about 35 to 45 minutes at 350 degrees.
