Hi, I'm Michael Ferraro, Executive Chef at Delicatessen in Manhattan, and today I'm going to show you the perfect jalapeno cheddar cornbread recipe. Here we have buttermilk, sugar, cornmeal, flour, milk, cheddar cheese, baking soda, butter, jalapenos that have been deseeded and diced, onion, baking soda, salt, and whole eggs. So for step one what we are going to do is we are going to take the butter, the seeded jalapenos, and the onion and cook them. So the one pound of butter. Don't be nervous this cornbread recipe serves a lot of people. The onions and the jalapenos. So now basically what we are going to do is turn the heat up to high. As soon as the butter melts we are going to give it a turn and then we are going to turn off the heat and let the flavor start to combine between the jalapenos and the onions. This takes about five minutes or so. So at this point our butter is fully melted and hot. And what we want to do is just turn the heat off and let the onions and jalapenos steep in the butter for five minutes. So what we've done is we've added all our dry ingredients into the mixer. And I'm going to go ahead and turn it on just to incorporate everything together. So once the dry is incorporated we can go ahead and gradually add all the wet ingredients. So now we want to go ahead and add our butter, jalapeno, and onion mixture carefully. Now when you are turning the machine back on you want to make sure that the machine is on low. The last step that we want to incorporate is our cheddar cheese. So now that everything is incorporated we can go ahead and turn the mixer on medium speed. So the next step for baking what I'm going to do is I have a cast iron pan that I'm going to gently spray with non-stick spray. I have our oven preheated to 300 degrees. I'm going to go ahead and pour our batter about half way. And go ahead and put this in the oven for 300 degrees for 20 minutes. So the cornbread has been baking for 20 minutes at 300 degrees in our cast iron skillet. And this is what it looks like when it's fully done.
