Hello, I'm Erika Monroe-Williams, creator of, and television cooking expert. Today, I will be showing you how to cook Italian chicken. We're gonna start with two boneless skinless chicken breasts. Now I've pounded these out to have an even thickness. And this recipe also calls for a quarter cup of flour, a half teaspoon each of onion and garlic powder, a quarter of a teaspoon of salt, and a pinch of black pepper, 3 large garlic cloves minced, a half of an onion sliced, I'm using a white onion, 1 cup of whole tomatoes, canned tomatoes, and then a half a teaspoon each of dried oregano and basil, a pinch of red pepper flakes, a quarter cup of dry white wine and half of a celery stalk chopped. And it also calls for half of a yellow pepper and half of a red pepper, and pasta noodles. Okay. So we're gonna start by getting our chicken ready. We just put the flour into a bowl for dredging. And the onion powder, garlic powder, about a quarter of a teaspoon of salt, and a little bit of pepper. We're just gonna mix this up, and right now I'm also heating my pan, I'm heating two tablespoons of olive oil in my pan, about medium to medium high so that we can cook our chicken. So we're just gonna lightly coat this with this flour coating, and we're just gonna drop them right into the pan. There we go. And we're gonna repeat with the other chicken breast. This recipe can be easily doubled for a family of four, but today we're just doing a nice lunch size for two. Okay? Okay. So we're gonna do the same with this chicken breast, place those into the hot oil, and then we're gonna lightly brown these on each side, and then we'll add our other ingredients. So our chicken is now lightly browned on each side, so it's time to add the rest of the ingredients. So you just throw them right into the same pan, right along with the chicken. So we're putting our onions in, our canned whole tomatoes, the oregano and basil, just a pinch of the red pepper, you can leave this out if you don't like a little spice, that just gives it a tiny little bit of a kick. The garlic cloves that are minced, the celery, and then the red and yellow peppers. You add everything except the wine. We're gonna add the wine at the very end. Alright, so I'm gonna lower the temperature to about medium low. I'm gonna cover this and let it simmer for about 20, 25 minutes, or until the chicken is tender. And then I will probably check on it in about 10 minutes and give it a quick stir. So my chicken has been simmering for about 20 minutes, and it just smells absolutely wonderful. I'm gonna add the white wine now. This is just gonna give it a little extra flavor. And I'm gonna turn this up just a little bit, there we go. And then we're gonna cook uncovered for another 10 minutes. And then this will be ready to plate on a bed of a pasta. So our chicken has been cooking another 10 minutes after we added the wine, and it just smells, absolutely divine. So now it's time to get our plate ready. We're just gonna put a bit of pasta on our plate. And you can choose any pasta you like. I did some curly egg noodles, and then I've seen people do this with spaghetti, or fettuccine, and that also works of course as well. Okay. Just get a nice sized amount of vegetables with this and sauce. This is great for a nice Sunday night dinner, and it's so simple and pretty quick to make. There you go, and that's how you cook Italian chicken.
