Hello, I'm Erika Monroe-Williams, creator of TheHopelessHousewife.com, and TV cooking expert. Today, we're gonna be making baked lemon butter chicken breast recipe. And today we're gonna be doing this for two. This recipe can easily be doubled for four. And we're gonna start with 2 boneless, but with the skin on, chicken breasts. And these are beautiful. They're about 6 to 8 ounces each. And the recipe calls for half of a stick of butter, 1 1/2 tablespoons of minced garlic, 1/4 cup dry wine, whatever you'd like to use a dry white wine, 2 teaspoons of grated lemon zest, 2 teaspoons of freshly squeezed lemon juice which is really important. you don't wanna be using any of that pre-squeezed lemon juice, because lemon juice turns very quickly. And we have 2 teaspoons of oregano, and 2 teaspoons of freshly chopped thyme, and then we also have some olive oil, some black pepper, and some crystals of sea salt flakes for the chicken breasts, we're gonna sprinkle that on. And we also have one lemon that is sliced into wedges. Okay, so first we're gonna take the half of a stick of butter, and we're gonna put it into a small sauce pan over about medium low heat. And you wanna be really careful not to burn the butter. So, you don't want it to really brown. So you wanna melt your butter, and then we wanna put in our minced garlic, and garlic burns very quickly also, so you really wanna watch this. And you only wanna have it on the heat for about a minute or so. Otherwise you're gonna have browned garlic, which we don't want. So we're just gonna stir this up for about a minute, until the garlic is nice and tender. So our garlic is nice and tender, it's been cooking for about a minute, and we remove it from the heat, which is important because we do not want the butter or the garlic to burn. We're gonna add our white wine to the sauce, so fragrant. And then also our lemon juice. We're gonna stir that in. Then our oregano, and our thyme. Make a really delicious sauce for our chicken breasts. Okay. So we're just gonna set this aside for a moment, and we're gonna prepare our chicken breast. Okay. So we are just gonna take some olive oil, this is so simple, we're gonna take some olive oil. We're gonna brush it over the breasts, just like this, just nice and evenly you wanna coat it. And then, we're gonna sprinkle with some sea salt. This is a really nice crystal sea salt. It's just absolutely beautiful. I love to cook with this. Or you can just use any sea salt. And then, we're gonna sprinkle with just a little bit of black pepper. You know you wanna do this to taste. You don't wanna do too much. Okay. So now we're gonna transfer the chicken breasts into a glass baking dish. And because we're only doing two breasts today, I'm gonna put this in a small glass baking dish. But if we're doubling this recipe to cook for four, you'd use, you can use a nice nine by twelve. Just place these right into the glass dish. And you wanna take our beautiful lemon wheels, and place them under the breasts. Just tuck them under. Probably about two per breast. There you go. And then we're gonna pour our delicious sauce over this. This is our lemon butter sauce. Right over the chicken. There you go. You wanna make sure, try to get a lot of garlic underneath so it doesn't burn on top. There we go. Now we're gonna pop these into the oven, and they're gonna cook for about 30 to 40 minutes. So our chicken's been in the oven for about 30 to 40 minutes, and it looks absolutely perfect. So what we wanna do is we wanna take it out of the oven and cover it immediately with aluminum foil and let it rest for about 10 minutes. So our chicken has been resting for about 10 minutes while covered with foil. And it looks absolutely perfect, and it smells so wonderful. So we're just gonna take these, and transfer them to the platter. Oh my goodness, they smell so good. And then I'm gonna take a little bit of sauce from the pan, the pan's cooled now, the dish is cooled now, so I'm just gonna spoon the lemon butter over the chicken breasts, before serving. Oh, smells absolutely delicious. And this would also make a nice sauce for some potatoes, if you're roasting some potatoes, be absolutely wonderful. And there you go!
