this is Chef Lance Corralez, with Cooking with Corralez. I'm going to teach you how to make Mexican corn on a stick. This is great in the southwest region of the United States of America, and it's great with our native produce. I like grilling my corn in the husk on the barbecue or on the stove top on a grill. And what you're gonna do is you're gonna just take a couple of the outer skins off, just like that, so it's still, you can get in there, and be nice and flavorful. And you see how this little tip of corn is left. I take that and I just cut that off with my knife. Beautiful! So we throw it on the barbecue from up to five to 15 minutes, depending on how hot your barbecue is. Then you're gonna have to do is make our flavorful spread for the Mexican corn on a stick. We need 1/4 stick of butter, 2 tablespoons of sour cream, you put that in with the butter. Then you can use queso fresca, or if you're not, can't obtain that at your local grocery store or a Latin store that's close to you, you can use feta cheese. And you crumble that up, put that into your mixture. Then we have here, ground chili ancho. This is a great chili. If you don't have access to that, you can also use cayenne pepper. Salt, pepper, about three turns. Then what we do, is we mix that around. See how that is? Oh boy, does that look good. I love Mexican corn. Love it. Once your corn is done, take it out of the husk. Look at those charred marks. Oh, doesn't that look beautiful? This is delicious, delicious! I have my stick. I put my stick in like that. And I hold it. I take the corn, I spread it on.
