Hi, this is Chef Lance Corralez here with a cooking technique of the day. Cooking technique is grilled corn with mayonnaise, feta and sour cream. What you can do first is you take the husk off your corn, place in it aluminum foil and gently wrap it. Then what you're going to do is throw it on the barbecue from up to five to fifteen minutes depending on how hot your barbecue is. If you don't have a barbecue, you can also use a grill or your indoor stove top which works just as well but that's going to take anywhere from 10 to 20 minutes. When your corn is ready, it's going to have the charred marks and this is what it's going to look like, nice and juicy. If you want some more charred grill marks on it, throw it back on the barbecue anywhere from a minute to two minutes, same thing with your indoor barbecue, that grill that's over on your stove top. It's very nice, very simple, very easy. Then what you're going to do once that is ready, you're going to take a quarter, an eighth of an ounce of feta cheese, two tablespoons of mayonnaise, two tablespoons of sour cream. Then you're going to throw them in a bowl and mix these flavors all together. This is a great dish. You blend it, break up that feta a little bit. Once the corn is done and that is blended, we're going to take a little bit of fresh cracked pepper. I always loved this the best. Then we're going to gently twirl it around. We're going to take this and gently spread it on the corn, really nice and try to get it as best and evenly as possible without getting your hands dirty. Sometimes you can use a pastry brush if you like but I prefer just doing it this way. It makes it more fun. You could also get the family in the kitchen to help you do it. Then you're going to take a little bamboo stirrer, stick it in the ear and gently put it on the plate like that. And here we have it, grilled corn with sour cream, mayonnaise and feta. Bon Appetit.
