Hi, I'm Phil Crispo, I'm a culinary instructor. Today, I would like to spend a couple of minutes just to show you how to make a very basic but very tasty Indian style dressing using yogurt and cucumber. Here we have some wonderful yogurt which has been strained. Or you can use Greek yogurt, cucumber. The grater for grating the cucumber. Some minced garlic, some lime. Some chopped cilantro which is absolutely beautiful. And some coconut. So lets prepare our dressing. Yogurt which has been strained. You put that into the bowl. So taking the cucumber and my box grater onto my board. I'm just going to grate this then flesh and skin. All very good. And probably about the same amount if not a little bit more of cucumber then we did with the yogurt. So about an ounce of yogurt and two ounces thereabouts of grated cucumber. So get that all off, get all that little top get it out. Now the dressing will thin down natural because of the liquid of the water that's in the cucumber. So don't add any liquid at this point. If your dressing is too thick at the end you can always add a little bit of cream. So into my yogurt and cucumber mix I'm going to add about a half a teaspoon or so, a little bit less if you don't want a strong garlic flavor. But I'm going to add half a teaspoon of garlic, minced garlic. Mix that in. I'm going to go in with a couple of teaspoons of chopped cilantro. I like cilantro so maybe a little bit extra. And to this I'm going to put a good pinch or two of dessicated or shredded coconut. Mix that in. And then we are going to take a lime and just directly over the bowl I'm going to do three or four runs down the grater. And just let the zest go in there. I love using zest. It's a good way of getting that lime or any citrus flavor into a product without actually using the juice. So lets have a look at our Indian yogurt dressing, yogurt and cucumber dressing. It come out of the refrigerator, it's been in there for about half an hour 45 minutes now. You can see it's very liquid now the juices have come out from the cucumber. And so it's pretty much exactly where I would want it to be right now. My own personal taste I just want a couple of turns of some peppercorn in here. And just a little bit of cilantro which I'm going to put on the top. But not right this second I'm just going to finish up by adding this to a container. And now you can allow your guests to spoon this at will or you can mix it for them. So I want to make sure I got plenty of juice in there. A good ratio of juice to filling. So it sits kind of flat on the bowl, you don't want a big mound that would be too thick. I'm going to take a little bit of chopped cilantro, sprinkle that on the top. And then I'm just going to finish it off with a little bit of red onion which adds a nice flavor. Nice it adds to the texture and also color. But color is not everything but this in this case it does make sense. So I take a small amount of finely sliced onion. Just going to break that up a little bit. I'm just going to pop this on the top. And then you can leave that on the table for your guests to help themselves. Put a spoon in there and you are all set. And you are done. Hi, I'm Phil Crisp, chef instructor.
