Hi, I'm your salsa sister, Carolyn Goldwater with Goldwaters.com and I am going to make us a black bean quesadilla with bell peppers. First, what we're going to do is we're going to take a skillet and put some nice butter in it. Butter is going to make your tortilla nice and toasty. This is a super easy recipe. You can use the black beans and bell peppers or you can add your own favorite vegetables in. Alright when our butter is melted, we're going to put our tortilla in to get it nice and toasted. Just give it a minute or so so it bubbles up and gets brown. The butter in the tortilla is such a great combination. We will spread a little bit of our refried beans. I'm using refried black beans. I really love the black beans refried but you can use the regular pinto beans and we're going to spread that on half. If you would rather use whole beans, you can use that, do that too but I think the refried beans make a really nice combination with the cheese and the bell peppers. Then we're going to put a little cheese. Meanwhile our tortilla is getting all nice and toasty and then we'll lay our bell peppers, I'm using a yellow bell pepper. You can use red, green, whatever you have handy or whatever is on sale. Okay, and you can put a little cilantro in if you'd like. Cilantro is optional. Some people love it, some people don't. I'm just going to sprinkle a little bit in for color plus I love the flavor of cilantro. So now we're going to fold over our tortilla. It should be getting nice and toasty and we're going to let that cheese melt and those beans heat up and we'll turn it over in one minute. Meanwhile, I'm going to get my plate ready with some salsa and some guacamole and sour cream. I'm just going to put it on the side here to have it available for when I eat my quesadilla or serve it to my guests. Now let's turn over this quesadilla. It should be getting nice and toasty on that side. The tongs are a nice tool for making quesadillas. They are easy, as easy or easier than a spatula. Get ready to transfer this over and we'll cut it up and plate it up for us. Now this quesadilla can be served as an entree or an appetizer. As an entree you can just serve it with a salad and a side of rice and you've got a wonderful entree. You can put some chicken inside or just serve it as an appetizer as we are doing here today. I like to use a pizza cutter to slice these. This makes it so much easier and plate it up and you have your wonderful black bean and bell pepper quesadilla. Serve it with a little lime too because that's awfully nice with the black beans. We'll put that on the plate too and there you have it. Enjoy.
