I'm your salsa sister, Carolyn Goldwater with Goldwaters.com, and we're making a turkey taco salad today. This is a yummy easy turkey taco salad and I have ground turkey here that I have browned and I'm going to add half a jar of salsa. I'm actually adding a raspberry salsa. You can add a red salsa, green salsa, any fruit salsa and this is going to be your meat base for the salad and stir that up and then we're going to let that cool down. We're going to use the other half of the jar of salsa for our dressing so keep that to the side. Now we're going to assemble our salad. We're going to have a head of Romaine lettuce, I just bought the bag already all torn up for me. I like it a little bit easy. We're going to add some kidney beans here you could add black beans or pinto beans but the dark kidney beans are nice. We're going to add diced avocado, sliced olives and that's a can of sliced olives. We're going to add about a cup of grated cheese and a little cilantro. You can leave the cilantro out if that's not your cup of tea but it tastes delicious in this salad. We're going to mix this about and then we're going to blend up the dressing. The dressing consists of sour cream and salsa. So we're going to take that half a jar of salsa, remaining from the half that we put in with the turkey and we're going to add about two tablespoons of sour cream. I'm just going to eyeball it here, that is about two tablespoons and we're going to mix that up. And this is your salad dressing. You can use low fat sour cream or fat free sour cream and have a completely low fat or a fat free salad if you'd like. And then we're going to add our turkey mixture which is our ground turkey with a half a jar of salsa. And then we will add our tortilla chips, just take your chips and crunch them up in there or you can use the strips if you want to get a little fancier but just crunched up chips is good. And you'll want to serve this right away after you crunch these chips up into your salad so make sure to do this right before you serve it, about a half a bag, a quarter bag, whatever looks good to you. We're going to toss this salad and we'll serve the dressing on the side so that it doesn't get too soggy but if you're serving it right away you can certainly toss it with the dressing. There we have a beautiful salad. We'll go ahead and plate it up right here. We'll just put the dressing on the side and that way your guests can serve it as they like it and a little squirt of lime and you have got a delicious turkey salad with a salsa dressing. Enjoy.
