Hello, I'm chef Jennifer Booker, the owner and executive chef of Your Resident Gourmet. Today, I'm going to show you how to make vegetable cream cheese. Here are the ingredients: cream cheese, that's softened, minced garlic, about two cloves, fresh baby spinach, roasted diced tomatoes, diced bell pepper and onion, shredded carrots, cabbage, and broccoli, sea salt and fresh ground black pepper. First, let's make sure our cream cheese is nice and soft. We'll add our minced garlic, diced tomato, diced bell pepper and onion, and our shredded vegetables. Stir until well combined. Next, we'll give our baby spinach a rough chop and add that to our mix. The best way to do this is bunch your spinach up tightly, and carefully chop through. Let's add our spinach to our cream cheese mixture. Give it a stir. A little fresh cracked black pepper, and a little sea salt. Today, I'm using a pink Himalayan sea salt. Stir until combined. Chill at least two hours, and serve with fresh vegetables, crackers, or chips.
