Hello I'm Chef Jennifer Booker, the owner and executive chef of Your Resident Gourmet. Today I will show you how to make a ricotta vegetable dip. Here are our ingredients, ricotta cheese, roasted and diced tomatoes, shredded carrots, broccoli, diced bell pepper, onion, minced garlic, fresh thyme, fresh ground black pepper and fresh sea salt. First we will put our ricotta cheese in the bowl, add our diced tomatoes, and combine. Let's add some shredded vegetables as well as some diced bell pepper and onion, a little bit of minced garlic. This is about two cloves worth and some fresh thyme. It adds a nice fresh bright flavor. Ricotta cheese is very mild so we do want to add some fresh black pepper and a little bit of sea salt. Today I'm using a pink Himalayan sea salt. We'll stir to combine and we want to make sure that we chill our dip oh at least an hour before service. Once the dip is chilled, we can transfer it to our serving dish and serve it with crackers, pita chips and fresh vegetables.
