Hi I'm Linda Harrell with Cibo E. Beve Restaurant in Atlanta, Georgia and today I'm going to teach you how to make meatballs. I have kosher salt, crushed red pepper, parmigiano reggiano cheese, chopped Italian parsley, milk, dry leaf oregano, chopped garlic, black pepper, ground beef, ground pork, ground veal, eggs, diced onion and panko bread crumbs. So what we're going to do, we're going to start by putting the meat in the bowl, we have the ground beef and we have the ground pork and we have the ground veal, okay. I'm going to mix those together, okay. I'm going to put the seasoning and put the salt, pepper, crushed red pepper, garlic, dry leaf oregano and put the parmigiano, some parsley. I'm going to mix it up again. Then I'm going to add some milk. I'm going to add the egg. I'm going to mix everything up. Okay, then I'm going to add the onion, a little bit of onion. I'm going to mix it up again, there's a lot of mixing. And then, the last step we're going to add panko bread crumbs and we're going to add just enough to hold it together and bind it, just mix it up like that, see, perfect. Just take it and we're going to roll it into a ball and we've got a pan here, put it in the pan and I add, when I put it in the pan I add a little bit of water and it kind of produces a steam that it cooks, it browns the meatball but it doesn't dry it out. It keeps it nice and moist and juicy inside. Okay, and you take the meatballs and you put them in the oven. I put them in the oven usually at about 375 for about 35 minutes and then I pull them out and there you have it, nice brown color. You don't want it dark brown, a nice brown like that and then I like to serve it with a San Marzano sauce and do a San Marzano marinara. You can find that on eHow.com as well.
