I'm Nancy Olah. Thank you for joining us today at eHow.com. Today, we're going to learn how to make an Italian sausage dish over polenta. I call it Italian sausage with peppers, fennel over peppery Parmesan polenta. It's a complicated dish, so we are not going to be going through the entire process. I have the completed dish here but I'll tell you all the ingredients. First we're going to start by sauteing about a cup of onions in olive oil. After the onions have sauteed we're going to add two to three cloves of pressed or minced garlic. Once that's all cooked I'm going to begin adding peppers, whatever color peppers you want to add is fine. This is a colorful, beautiful dish and I've added red, orange and green peppers. Then, we're going to take either about a cup and a half of crushed tomatoes or if you've had some prepared tomato sauce, you can add that too. Add a little bit of white wine, about a quarter cup and half a cup of stock. Last we're going to add about two cups of sliced fennel. We're talking about fennel, the vegetable, not fennel the herb. It's actually an Italian vegetable called finocchio and it can be sliced and eaten raw or stewed or served in a dish. It tastes a little bit like celery with a kind of licorice flavor, I love it. I'm also going to add some fennel seeds to intensify the fennel flavor as well as my beautiful sausage. This is a vegetarian sausage that I've chopped up and if you have it, put in some rosemary too. After I've stewed the fennel, peppers and sausage for about 45 minutes, I'm going to go ahead and pour it on to my prepared polenta, smooth it down nice, pop it in the oven for about 15 minutes at 350 degrees and then when it comes out, add a little bit of goat cheese to the top. It is delicious. Now depending on your audience, you may want to put mozzarella which is very kid friendly but either way your family will love this dish. Thanks for joining us today at eHow.com.
