Hi, I'm Nancy Olah, and it's good to see you today at Today, we're making a vegetarian stroganoff. Now the key to a vegetarian stroganoff is not just great mushrooms, but it's also adding a meat analog product that's going to closely replicate beef. I've got red onions sauteing in about two tablespoons of butter and now I've added three minced cloves of garlic. Once my red onions and garlic are smelling so fragrant, I've got two cups of thinly sliced mushrooms that I'm going to add to my saute. Now that my mushrooms are cooked and fragrant, I'm going to add a little bit of cognac and let that all quickly cook off. See one of the secrets of making a great vegetarian stroganoff is making sure you have a killer sauce with all the best ingredients. Now I'm going to go ahead while that's cooking and just whisk about a half a cup of stock into my cornstarch. Then I'm going to add a quarter cup of red wine and add it to my pan. As this starts to cook down, I'm going to add my Worcestershire sauce. Now if you are a strict vegetarian, you're probably going to want to have a vegan Worcestershire sauce because Worcestershire sauce does have anchovies in it, my two teaspoons of Dijon mustard oh and did I mention that was a tablespoon of cornstarch, some thyme leaves and a bay leaf. Now that my mushrooms are fully cooked, I put in my meat analog and now I'm stirring in the sour cream. The blessing of using a meat analog product like beefless tips or a steak strip is that you don't need to cook it long, it's not like beef so in just four to five minutes, your meat is totally cooked. As the sour cream is stirring in I'm going to lastly add my chopped fresh parsley, some fresh ground black pepper and a little bit of sea salt. My stroganoff is coming together beautifully, it's going to be rich, creamy and delicious served over buttered egg noodles and my family is going to enjoy this tonight.
