Hi, I'm Kari Underly, the author of the James Beard nominated book, "The Art of Beef Cutting." I get a lot of questions on how to make the perfect steak, chicken or pork on the grill, and the one thing that I always tell people is to always use a meat thermometer. Now that seems pretty simple, but there are many choices that we can take a look at. So I have three different meat thermometers. This is a very typical meat thermometer, you see like this, this is about six to ten dollars. You also have a meat thermometer here that actually has an alarm that will let you know when it's done, and then this one is an instant read thermometer and it just pops up. So what you want to do with these thermometers is it's very important that when you take the temperature of the probe of the meat, you want to make sure that you don't go all the way through, because then the temperature is reading at the end of the thermometer. So what you're going to look for is you want your dial to change. So if you are cooking something for medium rare you want this dial to move up to 130 or 140 degrees. If you want medium, then you would do 140 to 150, and if by chance you like your steak overdone, I mean well done, I would do 150 to 160. So my personal favorite is actually this instant read thermometer, and we're going to just take our probe, and this one has a little indentation right here, and we can just put it in the meat, and then it immediately tells us what the temperature is. Now if you are somebody who gets a little sidetracked while they're grilling, I recommend you use this type because you can actually set an alarm for the degree of doneness, and it will let you know when it's done.
